Bearnaise Sauce

From Dr. Atkins Diet Revolution, 1972

Makes 16 Tablespoons

Blend until smooth:

  • 1/2 cup melted butter
  • 2 Tablespoons lemon juice
  • 3 egg yolks
  • 1/4 teaspoon parsley
  • 1/4 teaspoon Krazy Salt
  • 1/2 teaspoon prepared mustard

Cook together:

  • 2 Tablespoons white wine (or chicken broth)
  • 2 teaspoons dried tarragon
  • 1 Tablespoon tarragon vinegar
  • 2 teaspoons chopped scallions
  • 2 packages sugar substitute

Gently simmer wine, tarragon, vinegar, scallions and sugar substitute in saucepan until volume is reduced in half.

Add to other ingredients in blender, blend until smooth, then reheat over a low fire and serve.
