I’m not usually a dip person (well, unless you count when I was eating potato and tortilla chips) but this sounds amazing! This would be fantastic on a burger or scooped up with some of those fresh pork rinds from the Mexican market … too bad I just ate! The link includes a recipe for sweet potato fries … ignore that one! 🙂 UPDATE: I finally made this yesterday. Play with it and it’s better if you make it ahead of time and let it sit so the flavors meld together. I had a teaspoon-ish on each of my burger patties last night and it was really tasty!
1/3 cup mayonnaise
1/3 cup cream cheese
1 jalapeno, seeded and chopped.
2 scallions, white and light green part only, chopped (my note: why? Throw the whole thing in there!)
1 lime, juiced
Salt and freshly ground black pepper
Place the avocado, mayonnaise, cream cheese, jalapeno, scallions, and lime juice into a blender or small food processor. Blend for 1 minute or until you have a smooth paste. Season with salt and pepper, to taste.
