Dark Chocolate Peanut Butter Layer Cake – Low Carb and Gluten-Free

Because … OMG! Look at this picture. Now, according to her, this cake serves 20, so in my house the carb count would be higher (no way in hell that would be 20 servings)! I don’t dare make this one (at least not yet). So, feel free and let me know how it turns out!



2 cups almond flour
2/3 cup dark cocoa
1/3 cup Coconut flour
1/3 cup unflavoured whey protein powder
1 tbsp instant coffee
1 ½ tsp baking soda OR 1 tbsp baking powder
1/2 tsp cream of tartar (omit if using baking powder)
1/2 tsp salt
1/2 cup butter, softened
3/4 cup Swerve Sweetener
4 large eggs
1 tsp vanilla extract
1/4 tsp Stevia Extract
3/4 cup almond milk
1 tbsp apple cider vinegar (omit if using baking powder)

Peanut Butter Frosting:
8 ounces cream cheese, softened
4 tbsp butter, softened
1 cup creamy peanut butter (I do not recommend natural peanut butter here)
1 cup powdered Swerve Sweetener
1 cup heavy cream
1 tsp vanilla extract

Chocolate Ganache:
5 tbsp butter
2 oz unsweetened chocolate
1/4 cup powdered Swerve Sweetener
1/2 tsp vanilla extract
