Atkins “Noodles”

2 eggs at room temperature, separated
1/4 teaspoon Krazy Salt (or seasoned salt)
3 Tablespoons butter

Melt butter in a cookie sheet that has sides.
Beat whites with salt until stiff.
Beat yolks with a fork and fold them into the whites.
Spread egg mixture on the cookie sheet and bake at 350 degrees F for 10 minutes, or until slightly browned. When cool, slice into strips and use in soups.

  1. Shirataki noodles (Miracle Noodles. Not to be confused with the Soy Shirataki that contains carbs), have come a long way. Who wants to eat eggs, just reformed into a shape like noodles. You still know they’re eggs, right? Angel Hair shirataki noodles are both delicious because they absorb whatever seasonings you incorporate and they are very filling, too. Try them. I get them auto-shipped, once a month.
